The Planning Phase (6-8 Weeks Before)
Every successful wedding starts with detailed planning:
- Multiple tastings with the couple
- Finalizing menu selections that reflect their story
- Coordinating with venue and other vendors
- Creating backup plans for weather and timing
The Week Before
This is when the real prep begins:
- Confirming final guest count
- Ordering premium ingredients from trusted suppliers
- Preparing items that can be made ahead
- Double-checking equipment and staffing
Day-Of Execution
On wedding day, timing is everything:
4 Hours Before Service:
- Set up kitchen and prep stations
- Final prep of proteins and vegetables
- Plating design rehearsal with staff
2 Hours Before:
- Begin cooking proteins to perfect doneness
- Assemble cold dishes and appetizers
- Final quality checks
Service Time:
- Synchronized plating for all 200 guests
- Each plate must be perfect and identical
- Hot food stays hot, cold food stays cold
